Fall in a Bowl

It’s fall! In a bowl! Easy, healthy and flavorful dinner idea to try ASAP!

YOU’LL NEED:⁣
1 cup uncooked tricolor quinoa⁣
1 medium butternut squash peeled and diced⁣
1/2 onion diced⁣
5 chicken sausage links, chopped⁣
4 large handfuls of chopped kale⁣
1 teaspoon minced garlic⁣
1/2 cup dried cranberries⁣
4 ounces crumbled goat cheese⁣

HOW TO:⁣
1. Preheat oven to 425. Place butternut squash on baking sheet and drizzle olive oil. Toss to combine. Season with salt and pepper. Bake for 25 mins.⁣

2. Meanwhile, place quinoa and 2 cups of water in a medium pot and bring to a boil. Reduce heat, cover, and let simmer for 18-20 minutes.⁣

3. While quinoa and squash are cooking, add olive oil to a pan over medium heat. Add onion and chicken sausage and cook until onion begins to soften, about 5-7 minutes.⁣

4. Then add the kale and garlic and cook until kale is wilted, about 4-5 minutes.⁣

5. Once all ingredients are cooked, add to a large bowl to serve. Optional - drizzle apple cider vinegar and honey overtop and toss well as a “dressing”!⁣

6. Garnish with your dried cranberries and goat cheese and enjoy!!⁣

This makes about 2-3 servings.
