One Pot Chicken & Broccoli

With such a packed schedule, if I can throw dinner all in one pot and call it a day it's a WIN. This Cheesy Chicken Broccoli Rice pot will be on rotation.

YOU'LL NEED:
1.5 LB cubed chicken breast
2 tbsp olive oil
2.5 cups low sodium chicken broth
Garlic powder, salt and pepper to taste
2 cups shredded sharp cheddar cheese
1 packet of pre-cooked brown rice
1 bag of frozen broccoli florets
2 tbsp plain Greek yogurt
Pinch of red pepper flakes (optional)

HOW TO:
1. Heat a large saucepan over medium heat and add olive oil. Once hot, add cubed chicken and cook for 6-8 minutes or until chicken is white on all sides.

2. Add salt, pepper, red pepper flakes and garlic powder. Then add chicken broth and cooked rice. Bring to a boil. Once boiling, cover with lid and reduce heat to medium-low for 10 minutes.

3. While simmering, shred your cheese if you used a block (melts better!). Once ready, stir your cheese and Greek yogurt in to the mixture until melted.

4. Add frozen broccoli bag and stir until well combined. Drain excess liquid from pot in sink. Keep covered until ready to serve!
