15 Minute Beef Ramen Skillet

This was the yummiest, easiest dinner we’ve made in a while! Reminded me of my Skinny Slaw..but with noodles?!? Say less. Tweaked a tad but recipe originally by @realfoodwholelife!

YOU’LL NEED:⁣
1 tsp olive oil
1 pound lean ground beef
¼ tsp salt
3 tsp powdered garlic
¼ cup soy sauce (I used low sodium)
1.5 cup low sodium chicken stock
2 tsp brown sugar
6 oz plain ramen noodles
9 oz coleslaw mix
1 cup shredded carrots

HOW TO:⁣
1. Heat a large, high-sided skillet over medium-high heat. Add the olive oil and ground beef, break apart the meat into small chunks, and cook for 3 minutes until beginning to brown.

2. Add the salt and garlic, and cook until the meat is no longer pink, about 2-3 more minutes, stirring frequently.

3. Add the soy sauce, stock, and sugar. Turn the heat to high and bring to a strong simmer. Add the ramen noodles and cook for 2-3 minutes, or until the noodles begin to soften but are not fully cooked. Make sure to coat the noodles!

4. Add the slaw and the carrots, stirring to combine. Cook an additional 2-3 minutes for the noodles to cook completely and the vegetables to soften.


Serve immediately! (This made about 4 servings)
