Frozen S’Mores

My go to summer dessert for any gathering! A neighbor introduced me to these a few years ago and they’re still my favorite treat

YOU’LL NEED:⁣
1 (5.9 oz) box sugar free instant chocolate pudding
2.5 cups whole milk
2.5 cups sugar free Cool Whip (defrosted)
12 graham crackers, broken in half
5 oz low fat cream cheese (room temp)
6 oz marshmallow cream
pinch of salt

HOW TO:⁣
1. Line a 9x13-inch baking dish with parchment paper (leave a little over hang)

2. In a medium bowl, whisk together the pudding mix, milk, and 1/2 cup Cool Whip until smooth and creamy

3. Lay half of the graham crackers evenly in the bottom of the baking dish. Spread pudding mix into an even layer over the top (you may not use all of it) and chill in fridge for 10+ mins

4. In a medium bowl, beat together the cream cheese and marshmallow cream until smooth. Fold in remaining 2 cups Cool Whip and a pinch of salt

5. Spread cream cheese mixture evenly over the chocolate layer. Place remaining graham crackers over the top. Cover with foil. Freeze 6 hours, or until firm enough to cut through. Then cut into even squares

6. Eat while softened or store in the freezer in a zip top bag. If frozen, allow sandwiches to soften at room temperature 15 minutes before eating!
